Roast Venison

You'll need:
1 Venison Roast
salt and peppr to taste
2 onions, sliced
8 medium potatoes
8 carrots

Brown venison in small amount of hot fat or oil in dutch oven; turn to brown all sides. Sprinkle venison with salt and pepper. Cover vension with water. Bake covered at 350 degrees for 1 hour and 30 minutes or until vension is tender. Pare and halve potatoes and carrots. Add carrots, potatoes and onions to vensison. Bake, covered for an additional 30 minutes or until vegetables are done.

Broccoli Casserole Recipe

Boil for 5 minutes 2 boxes of frozen chopped broccoli. Drain.
In a big bowl mix:
1 can of cream of mushroom soup
1 tsp. of onion salt or 1/4 cup of chopped onions.
2 beaten eggs.
1 cup of shredded cheddar cheese
1/2 cup of mayonaise
After mixing add broccoli to mixture.
Pour in baking dish.

TOPPING:
melt 1 stick of butter
add 1 stack of crumbled ritz crackers
mix

Add topping to mixture in baking dish.

Bake 25 to 30 minutes at 350 degrees.

Home Made Biscuits

4 or 5 cups self rising flour
2 cups sweet milk
lard (about the size of an egg)

In large bowl mound up flour. Make a fist sized hole in the center. Put lard in hole. Using hand, mix lard and flour. Add milk a little at a time, until you form a ball of dough. Continue to knead dough until stiff enough to roll out. On floured board, roll a bout 1/2" thick. Cut out with biscuit cutter. Place on lightly greased pan and bake at 375 degrees until brown. If biscuits brown on the bottom first, turn them over.

Poor Man's Salad

1/2 small head cabbage-chopped.
1 small onion-chopped.
1 large tomato-chopped.

Add two or more (to your taste) TBS. mayo.

Mix and Chill. Serve.

Poor Man's Soup

4 large cubed potatoes
1 large chopped onion
1 large can, peeled and crushed tomatoes
2 quarts of water
4 TBS. bacon grease

Put all ingridents in a large pot and bring to a hard boil. Reduce heat to low. Cover and cook until all vegetables are cooked through. Salt and Pepper to taste.
